ITS NOT HOLLANDAISE! if you are ordering one of their eggs benedict variations that come with `hollandaise sauce` don't be expecting a thick delicious sauce with a bit of flavor. hollandaise is an emulsion (heated and mixed slowly) of butter, egg yoke, and lemon or vinegar and seasoned. it is delicate and somewhat difficult which is why many restaurants only have it on some days. ann sathers `hollandaise` is raw egg yoke with melted butter added. that's it. and that is not a hollandaise. it's flavorless and cheating the customer. so plan on ordering an overcooked omelet instead.
